Unripe pumpkins were added in the 1.26 update. You cannot eat them because they are very unhealthy for you, but boars, bears, cassowaries and ostriches eat different ones. They have 6 stages and will start becoming a lighter green until they are fully grown. When fully grown, they are completely orange.
